[Sugar and Spice] 蛋餅 Dan-Bing

Happy Valentine's Day everyone! Did you do something special for yourself or your significant other? :) Boyfriend and I aren't big on all the commercialized offerings such as overpriced couple meals and pink-overdosed goods, but we do like to do something nice on this day, preferably at home so we won't have to beat the crowd. One thing we particularly like is when the other person cooks for us, so what better way to celebrate than cooking together?


Today the dish I want to show you is 蛋餅(Dan-Bing),a common dish found at breakfast shops (早餐店)。It's a Taiwanese omelette, with eggs and an assortment of ingredients wrapped inside crepe-like pastry. We are not master chefs by any means, but I hope this could give you a idea of what it looks like and maybe be interested in making your own version!



What you need: (Serves 1 person)
蛋餅皮 Crepe Simple Orientale (this sounds fancy!)
蔥 Green Onions
蛋 Egg
起司 A piece of cheese, or anything you like, e.g. sweetcorn, ham,bacon, tuna, spam......
油 Cooking Oil
鹽 Salt (if your filling isn't salted like the cheese we used)
平底鍋 frying pan



Prep Work:
1. Cut up green onions. I used up the whole thing shown in the first photo, which is ALOT. You can just use a pinch of them to add flavour, or you'll be left with the smell in your mouth for hours. Be warned!

2. Beat eggs casually. You can use one egg or be generous and use two.

3. Put the chopped green onion into the egg goo.



Get cooking:
1.Turn on heat, dribble a bit of oil into the frying pan.



2. Swish the pan around to distribute the oil evenly.



3. Pour the egg+green onion mixture into the pan. Shapes don't matter.



4. Peel a piece of crepe off the plastic wrap. The shiny plastic may look oddly tempting, but it's not edible!




 5. Lay crepe onto egg and lightly pat it with your spatula to make it even.




 6. Let it cook for a while, then flip it over with your spatula. How do you know it's cooked? I have no idea. It's okay to eat raw eggs and flour anyway,right?




 7. place your choice of ingredients down the middle. It doesn't have to be super neat, but we are going to roll it up later, so keeping it to the centre helps.




 8. Fold sides of crepe to the middle.


9. Don't know what this levitating trick is, but you don't have to do it.



10. Plate and serve!



With as few as 3 ingredients and 10 steps, you can make this at home. It may not look like much, (it looks completely different from the store-bought variety haha) but it really tastes good! 
It's very versatile, it can be as simple as eggs+green onion+crepe, or you can make it super lux with eggs+green onion+crepe+corn+cheese+bacon+tuna.......the combinations are endless! The cheese we used was salty, so we didn't add any other condiments. If your choice of fillings aren't salted, you may want to add some salt or have it with soysauce paste, which is how most people eat it!

  3. Did they have the same stuffing as we do in Taiwan? What was it called? Omelette? Pancake?
